I ordered my malt powder and some other things but can track and see that they won't be here before Tuesday. I have a four day weekend and have the Artos bread baking in the oven, filling my house with an amazing aroma. I have found a home brew store that will sell me a pound of malt powder for five dollars. None of the bagel shops in San Antonio had malt powder. Maybe that is why the bagels don't taste like the one's that I grew up on. I have to decide if I am heading to the home brew store or if I am waiting for my order from King Arthur... I love bagels. One thing you could try if the dried dough under the fingernails thing is bothering you is to wear latex gloves when you knead (you can get the un-powdered version at the drugstore).
