I made my cornbread sans bacon – roasted pasilla chilis instead. I too am, as u say “not on the food chain” (brilliant) so no bacon 4 me. Its tasty and the neighbors liked it a lot! Gosh if I would have made muffins – I would have ate them all!! Happy baking!

Love the idea for the muffins. They look beautiful. I’ve actually never heard of filling up the empty tins, but I guess I always over- or underfill to get the right amount.

Your corn meal muffins look great. Terrific way to make this recipe.
I ‘do’ love traditional corn bread more than this recipe but it was fun anyway.
